WINE MAKING Coming from the stony hills of Năeni village the grapes are picked up by hand, destemmed and slightly crushed, followed by 6 hours of skin contact in the press at 8˚C. Alcoholic fermentation occurs in stainless steel for a period of 14 days. After racking, the wine is aged for 1 year before bottling. This is the only Domeniile Sahateni’s dessert wine, made of late harvested grapes - only in the favorable years of sugar accumulation and noble rot setting.
